Garlic: We Love it
We've been growing garlic here for more than ten years now and have some excellent garlic strains as a result.  We're starting to get the hang of growing and curing garlic too.  It's not always easy but it is rewarding to have fresh garlic through most of the year.
"Rosies"
The pride of our garlics.  Voted the most delicious falvoured pan fried garlic by taste testers at the Hastings Farmers Market.  Rosies is a rocambole (French) type of garlic with large, evenly-sized cloves.  It is easy and exquisitely delicious to use and, of course, the most sensitive type to grow.

 
Australian White
OK, this is the same as Italian White, but we and others in the district have been growing this variety for so long that we have claimed title to it.  This is your classic, full-flavoured, long-keeping garlic.  The curvaceous indetation at the base and keeping qualities make the most beautiful and practical garlic braids.
Giant Russian, Jumbo or Elephant Garlic
Not a true garlic, but a good impression.  Russian or whatever you want to call it is actually a leek with a garlic flavour.  The massive cloves are beautifully sweet and creamy when baked whole.  Flower spikes are surprising as a steamed or fried vegetable and the florets make a spicy and colourful salad topping.  This is the essential ingredient for garlic "chips" or stuffed baked pumpkin soup.
Where to find our garlic
FoodPrints garlic can be found at the Hastings Farmers Market on the fourth saturday of the month in Wauchope.  Harvest begins in October and we usually have garlic available until July.
Is there anything better?
We still can't decide if there is anything better than our fresh garlic.  Be at the Farmers Markets in October or come out to the farm at harvest time to get your fresh green garlic.  This is truly special stuff and it's only available at a limited time of the year.
Other varieties we have tried
If you're thinking of growing garlic in this region you should know that we grew "Glen Large" for a few seasons.  Developed at Gatton Research Station for sub-tropical Australia, Glen Large is a top-setting garlic with a sweet and slightly "nutty" flavour, excellent for Steak Dianne.  It has large cloves and provides a very early harvest.  We found that it didn't keep well, so we stopped growing it.  It may work out better for you, call us if you want to discuss it.
